Abstract

A phenomenological lattice model of a multilayered or cylindrical arrangement of lipid molecules (lyotropic liquid-crystal smectic or hexagonal phase) is proposed in order to understand the structural surface properties of concentrated lipid dispersions in the presence of shear flow. It is argued that the shear flow induces surface anisotropies that result in a possibly ‘reconstructed' surface phase for supercritical flow velocities (or shear rates). A domain-wall analysis reveals the presence of an intriguing incommensurate phase that turns into a rough surface phase for high enough temperatures or flow velocities.
