Abstract

Differential scanning calorimetry (DSC) was used to study the glass transition behaviour of dehydrated embryos of Zhongzu1 rice at different developmental stages. The results showed no visible changes in Tg during the process of DSC, however, there were irreversible changes in vitrification behaviour. The changes in vitrification behaviours between the different developmental stages were negligible. Collectively the results suggested that the desiccation tolerance in rice seed was tightly associated with a cellular glassy cytoplasm.
